Salmon, spinach and feta packets recipe
Ingredients: 1-1/2 lbs Salmon divided into 4 equal pieces. 1 pkg frozen spinach, 8 tbls feta, 1/2 Fresh Lemon, Salt / pepper, foil
Instructions: Thaw spinach and press out most the moisture. Lay out 4 pieces of foil.
On each piece of foil: 1/4 of the frozen spinach, 2 tbls feta, one or two slices of fresh lemon, salt and pepper the meat side of the salmon and put meat side down skin side up on the ingredients. Fold up the foil.
Bake at 350 or put on BBQ for approx 15-20 min (time will vary depending on thickness of the salmon). When cooked the skin will pull right off and you can flip it right on to a plate, and enjoy!
